You will review Caleb’s diet analysis reports in order to answer the questions on this case study. There is no time limit on this assignment, but you only get one attempt. Nutrition (and anything in healthcare) often includes case studies. A case study involves applying what you learn to real-life situations. Some of your assignments in this course involve case studies. With some of the assignments, you will be answering multiple-choice questions. However, with the diet analysis case study and with most discussions, you will need to “discuss” your thoughts on the case study and formulate essay-style answers. This is a great way to help you learn the information and really apply what you learn.
With case studies, you are applying what you have learned to a specific person and their situation. It is helpful to understand the Do’s and Don’t of case studies before you complete your assignments.
DO:
Read the case study thoroughly before answering the questions.
Figure out what the person is doing right – and don’t attempt to change those things.
Figure out what the person might be doing wrong – and focus your answers on strategies to improve what they are doing.
Respect the person’s ethical, religious, or cultural food preferences.
Be realistic with what you suggest the person should do.
Make sure everything you recommend has a purpose, and specify what it is.
DON’T:
Recite “general” information about the person’s recommended diet therapy. If the person is already doing something correctly, there is no point in suggesting they do it. This is not actually addressing the person’s specific situation. Rather, you can suggest they continue a specific behavior.
Be specific with recommendations, and in particular, how to accomplish what you are suggesting.
Recommend foods that the person in the case study might be unfamiliar with.
Try to change everything the person eats. It’s better to help them work with the foods that are already part of their cultural food preferences.
Make “assumptions” about things that are not specified in the case study.

“Sara is consuming too much sodium from processed foods and canned foods. The canned green beans contain 870mg alone. Switching to frozen green beans could reduce her sodium intake considerably. Snacking on fresh fruit instead of chips would also be helpful in reducing her sodium intake”
“It is good that Mr. Jones eats vegetables, but I would also suggest expanding the variety of vegetables that he eats and try different types. He might find some other types that he enjoys. I suggest he try raw, leafy greens since they contain many vitamins he may be lacking. This will help increase his nutrient intakes”
